  • Entry #3 - Potato Salad



    - INGREDIENTS -

    1/4 c finely minced onion
    4 c diced potatoes
    2 stalks chopped celery
    3/4 c Veganaise
    1/4 t. garlic powder
    1/2 t. prepared mustard
    1 t. Italian salad dressing
    - DIRECTIONS -

    1. Bring water to a boil and add potatoes and onion. Boil until tender but firm.



    2. In a bowl, combine celery, Veganaise, garlic powder, mustard, and dressing.

    3. Drain pot and mix well.

    4. Serve~!

  • Entry #2 - Chick Pea Appetizers

    First of all, sorry for the lack of pictures in this entry. I ran out of batteries for my camera and decided to use my mom's, which I dropped and broke on my kitchen floor when I was done cooking. Enjoy this post-recipe picture that I took with my camera:




    - INGREDIENTS -

    olive oil

    spices (I say this broadly: usually, I use garlic, onion powder, pepper, and recently started to add crushed red pepper. They get really spicy.)

    2 cans of Garbonzo beans, aka Chickpeas

    - DIRECTIONS -

    1. Remove the can from your peas, drain, and wash.

    2. In a bowl, mix together your olive oil, spices, and chick peas.

    3. Spread the peas out on a foiled pan and bake in the oven at about 400 degrees for 20 minutes. Only take them out when they're sort of crunchy and the moisture is mostly gone.

    4. Enjoy!

  • Entry #1 - Mom's Cream of Broccoli Soup

    I know it's not winter, but this soup is still the boss. Creds go to my cool mom for this recipe. She is not a vegan but can veganize anything.

    - INGREDIENTS -

    1 tbsp oil (olive is nice, but any will do)

    1 medium onion, chopped

    2 washed, cleaned and chopped heads of broccoli

    1 shredded carrot

    1 tsp minced garlic

    4 cups soy milk (unsweetened is best. this time i just used "plain" - a little sweeter than usual, but not bad. my mom accidentally made me mashed potatoes with vanilla soy milk once. they weren't bad either; just very dessert-like.)

    - DIRECTIONS -

    1. Sautee your onions in the oil until tender.

    2. Put remaining ingredients in a pot and simmer until the broccoli is soft. (about 20 minutes)

    3. Turn off heat and put the soup in your blender in small batches. If it's still hot, hold the lid down with your hand or a dry towel because the lid could fly off and paint your kitchen with broccoli.

    4. Serve~! I like mine with crackers but you can try it with anything - shredded soy cheese, carmelized onions, homemade croutons, garlic bread, etc.

    This is tofu_scramble, here. This blog might not look like much now, but it'll be epic. Pinky promise. In the future, it'll be an archive of super easy vegan recipes shown through photos and videos. Part food network, part cookbook, part awesome.
